Where food emulsifiers are used

Bakery and starch systems use distilled high-mono glyceryl esters and lactylates as crumb softeners and anti-staling aids; a mixed mono/di of the same melting point is not interchangeable. Ice cream, whipped and beverage emulsions use selected polysorbates and sorbitan esters to hold fat and protein. Dry soup and flavour wetting use hydrogenated castor ethoxylates and alcohol ethoxylates where permitted.

Monoester content drives emulsifying power on glyceryl grades. Distilled high-mono GMS is a different product from a 40–60% mono mixed glyceride of the same C16/C18 cut.

Sorbitan esters are oil-soluble (low HLB). Polysorbates are the hydrophilic pair. Order both when the formula is a classic SPAN/TWEEN-type blend.

Coco diethanolamide appears on some older food-emulsifier lists as a bakery emulsifier. Confirm whether the current brief still allows that chemistry; many food specifications have moved to glyceryl and PG esters.
